- The justification for assuming that John was the son of Thomas and Elizabeth is as follows:
1. John was born in the same place as Thomas Henry Dickenson Minter, who is assumed to be his brother
2. although in later life John was a victualler, in 1842 he was a joiner, a fairly natural occupation if he thought of following in his father's footsteps as a shipwright. And one of his (assumed) brothers was a joiner.
3. in 1851 John had staying with him his sister Charlotte. Although it was said she was born in Folkestone and the age isn't quite right, it seems quite possible that this Charlotte was the daughter of Thomas and Elizabeth baptised in 1822 in Deptford.
4. (added in October 2009) John Minter's marriage has now been found in the London Metropolitan Archive at Ancestry.co.uk: one of the witnesses was Robert Minter, whose signature is almost identical to that of Robert Minter, ie John's brother, who married in 1844.
When daughter Mary Caroline was baptised in 1838 John was a ship joiner of Garden Row, Church St; in 1841 occupation was joiner; in 1846 he was a victualler of 60 King Street.
1841 census: in John Street, St Paul Deptford, Kent, John (28, journeyman joiner), Mary Ann (29) and Elizabeth (5 months). All born in Kent.
www.bargemen.co.uk/pdf/bum_boat.pdf has a transcription of a Watermen's Bum boat book in which there is an entry, dated 5 May 1843, for a John Minter, aged 30 of 38 King Street, Deptford, owner of a boat/skiff called the Mary Ann. It's not clear whether this entry relates to this John Minter but it seems likely.
Appeared in the London 1845 Directory and Kelly's PO Directories of 1850, 1852, 1853 & 1856 as John Minter, Horse & Groom PH, 60 King Street, Borough.
1851 census: at 60 King Street, St Saviour Southwark, Surrey, John (38, victualler, born Rotherhithe), Mary A (38, born Deptford), Elizabeth A (10, scholar, born Greenhithe), Emma A (7, scholar, born Southwark, Surrey), Grace E (4, scholar, born Deptford, Kent) and Charlotte (sister, 26, born Folkestone, Kent).
From James Earley: The Morning Chronicle of May 17 1859 reported, under the headline "Attempted Murder Through Jealousy", that a young man from Guernsey, Charles Peake, was brought before magistrates at Dartford, Kent, charged with maliciously stabbing a young man named Charles May. The prisoner had gone to John Minter's pub, the Hull Trader and fallen for John's daughter. He invited Charles May and a friend called Webb, together with two of John Minter's daughters, to go on board his vessel, wich belonged to his father. Peake became jealous of the attention May paid to his "sweetheart" and the two ended up fighting. The fight ended by Peake stabbing May in the chest. The hearing ended with Peake being commited for trial at the summer assizes.
[Interestingly, one of John Minter's daughters, Elizabeth Ann, married a man named Webb but I don't know whether it was the Webb who was named in the hearing.]
1861 census: at the 'Hull Trader' in Swanscombe, Kent, John (48, inn keeper, born Rotherhithe), Mary Ann (48, born Swanscombe, Kent), Grace E (14, scholar, born Southwark, Surrey) and Jane E (9, scholar, born Southwark, Surrey).

3 September 1868 Effects under £100. Letters of Administration of the Personal estate and effects of John Minter late of the "George" Tavern Somerset-street Aldgate in the City of London Licensed Victualler deceased who died 12 August 1868 at the "George" aforesaid were granted at the Principal Registry to Maryanne Minter of the "George" aforesaid Widow the Relict of the said Deceased she having been first sworn.
Buried aged 55 of The George, Somerset Street, Aldgate, London.
1871 census: John probably died in Q3 1868. His widow Mary A (58, born Greenhithe) was living at 1 Garibaldia Cottages, Croydon, Surrey with son-in-law William C CORBEN (24, journeyman butcher, born Portsmouth, Hampshire) and his wife Jane H (sic) CORBEN (20, born 'Surrey Boro London').
1881 census: Mary A (68) was an 'Inmate L V Asylum' at number 73, Licensed Victuallers Asylum in Camberwell. Granddaughter Elizabeth E WEBB (17, servant, born Dartford, Kent) was staying there too.
1891 census: Mary A (78) was still at number 73, Licensed Victuallers Asylum in Camberwell. Her granddaughter Annie BOLTON (13, born Bermondsey) was with her.
